Dal Bhaat

Ingredients:
Rice
1-2 good handfuls
yellow dal
2-3 small potato’s cut
into strips or diced
2-3 Onions chopped
1 good handful
cabbage
1 handful green beans
sliced
Handful spinach
6 Tomato’s
1 ½ Tsp cumin seed
Green chilli’s (as many
as you want) chopped
Approx. 2 tsp chopped
ginger
Approx. 10-15 cloves
chopped garlic
3 tsp turmeric
Salt (lots)
Red Chilli powder (as
much as you want/
dare)
Masala powder (meat
or garam).
Wash and cook the rice
to your liking.
Directions:
Dal:
Wash the dal and cook
with water, preferably in
a pressure cooker, with
a tsp of turmeric, tsp of
salt, 2-3 chopped
tomato’s and some oil.
When the dal is almost
done, using a wok, fry a
tsp cumin seeds in oil
add some green chilli
(to your liking), approx.
½-1 tsp ginger and 1-2
tsp garlic, fry until
starting to brown. Now
add a good handful of
onion and fry until
starting to brown.
When the onion starts
to brown add 1 tsp
turmeric, 2 tsp masala
powder and 3 tsp salt
fry for a minute more
stirring all the time and
add to the cooked dal.
This can be set aside
and warmed up later.
Subji (vegetable):
Place the vegetables,
some salt and turmeric
in a pan of water and
bring to a boil for only
a minute or so.
Again using a wok, fry a
tsp cumin seeds in oil
add some green chilli
(to your liking), approx.
½-1 tsp ginger and 1-2
tsp garlic and fry until
starting to brown. Now
add a good handful of
onion and fry until
starting to brown.
When the onion starts
to brown add 1 tsp
turmeric, 2 tsp masala
powder and 3 tsp salt
fry for a minute more
stirring all the time and
add the drained
vegetables to the pan
continuing to fry and
mix everything together.
Feel free to add red
chilli powder if you like
a bit more of a kick.
Saag:
Steam the spinach until
cooked.
Fry some ginger and
finely chopped green
chilli in oil. Add the
spinach and continue to
fry mixing everything
together.
Acharr (pickle):
Fry 1 tsp ginger, 1-2 tsp
garlic as much green
chilli as you can handle
in oil.
Add a handful onion
and fry until starting to
brown.
Add 4 chopped
tomato’s and continue
to fry mixing everything
together.
This can be allowed to
cool before serving.
Place a good portion of
rice onto each serving
dish. On the side place
a good portion of subji,
some saag and acharr.
In a separate bowl
place a good ladle full
of dal to be poured of
rice as required. And
enjoy!
