Ilisher Ambal With Mustard Paste

1 Hilsa head
2 tsp Tamarind pulp- diluted with water
1 tsp Turmeric powder
1/2 tsp Mustard paste
3 Whole Red chillies
1 sprig Curry leaves
1 tbsp Mustard oil
Sugar to taste
Salt to taste
1.Clean and wash the hilsa head well.
2.Marinate the head with turmeric powder and salt for 10 minutes.
3.Heat oil in a pan and fry the fish head and bread the fish into medium size pieces.
4.Heat 1 tsp oil in a kadai, add the mustard seeds and allow to splutter.
5.Add the red chillies, mustard paste and the tamarind water, bring to a boil.
6.Add the salt and sugar, mix well.
7.Add the fish and boil for 3-4 minutes and remove from heat.
8.Garnish with the coriander leaves and serve hot.
