1/2 cup unsweetend cocoa powder
2 t baking soda
1 t salt
2/3 cup veg oil + 1 T
2 T white vinegar
2 T extra strong coffee--cooled

Chocolate Icing
1 Stick unsalted butter
1-1/2 Cups sugar
1 Cup unsweetened cocoa powder
pinch of salt
1-1/4 Cup heavy cream
1/4 Cup sour cream
2 t vanilla
Preheat oven to 350 degrees. Spray a 9x13 pan with nonstick spray. Whisk dry ingredients together in a mixing bowl.

Combine water, oil, vinegar, coffee and vanilla in a large measuring cup. Add the dry ingredients and whisk just until combined--a few lumps are okay. Divide batter among pan then bake for 35 minutes.

Cool cakes for 45 minutes then frost.


Melt butter in a large saucepan over medium heat. Stir in sugar, cocoa, and salt. Combine heavy cream, sour cream and instant coffee in a large measuring cup, mixing until smooth. Cook until sugar has dissolved and mixutre is smooth. Do not boil.

Take off the heat and add vanilla. Cool icing for about 3 hours.
