Blackberry Waffles w/homemade Blackberry Syrup

Ingredients:
2 cups Gluten-Free or other all purpose flour

1 tsp baking soda

1 tsp baking powder

1 tsp salt

1 cup milk or other creamer (Flavored creamers work great in French toast, Pancakes and Waffles - Play & Explore) Two of the best are Caramel and French Vanilla. These Blackberry waffles were great using French Vanilla.

1 egg

1 tsp vanilla or other flavor extract unless using a flavored
creamer.

Directions:
Spray iron or grill w/Non-stick cooking spray.

Preheat Waffle Iron or Grill until preheated.

Mix dry ingredients in large mixing bowl.

Blend wet ingredients together.

Add wet ingredients to dry ingredients and blend.

If mix is dry, add as much liquid as necessary to reach a semi-thick batter.

Once waffle iron or grill is preheated, pour batter into unit and cook according to directions.

Unless using a Waffle Iron which automatically cooks and turns, be sure and turn waffles over half way through cooking, approximately 4 min or til golden brown on each side.

To make syrup:

Heat a small amount of non-stick cooking spray in large skillet.

Add in Fresh Blackberries.

Add 2 tsp lemon juice

Add 1/2 cup agave nectar

Add 1/2 cup water

Cook down to a syrupy consistency.

Remove waffles from grill or iron and smother with Fresh homemade blackberry syrup. As my husband says, "being sure to fill in all the little squares" - Enjoy!!!!
