Ahi, Spinach & Roasted Red Pepper Salad w/Herb Cheese

Ingredients:
1-2 lb Ahi tuna steaks

1/2-1 lb organic raw spinach

2 small to medium shallots peeled and chopped

1 to 2 roasted red bell peppers
(oven roasted or store bought)

Herb Cheese (Large Sticks) to garnish
Directions:
If desired, marinade Ahi tuna steaks in soy or soy ginger marinade before broiling or grilling for 30 min;

OR

Pat tuna steaks dry with clean paper towel then sprinkle each side generously with Emeril's Essence or other similar spice mix.

Broil Ahi steaks approximately 6 to 8 min per side for medium well, adjust time according to taste.

Chop cooked Ahi tuna into small pieces.

Place onto a bed of raw organic spinach.

Add shallots.

Top with organic roasted red bell peppers.

Add favorite gluten-free dressing or a simple squeeze of lemon and grated Italian cheese.

Add other toppings such as croutons, sunflower seeds or others as desired.

Garnish with a fair sized stick of favorite flavor herb cheese.
