Gone Absolutely Bananas French Toast w/Pecans or Walnuts

For making french toast:

2 slices gluten-free Bread

2 lg eggs

1/4 cup milk or dairy substitute

1 tsp vanilla (or rum extract for a little zing)

1/4 stick butter or margarine (butter browns better)

For making sauce:

3/4 cup brown sugar

3/4 stick butter or margarine

2 lg bananas

1/2 cup pecans or walnuts

1 1/2 cups real maple or other desired syrup

To make French Toast:

Melt 1/4 stick butter or margarine in non-stick skillet on high.

Before butter melts, lower temperature slightly.

Add each piece of bread, browning each piece on both sides til golden brown.

Remove from pan, plate and set aside.

To make syrup/topping:

Melt 3/4 stick butter or margarine in non-stick skillet (Use the same pan for added flavor).

As butter melts add 3/4 cup brown sugar and began to stir.

Once sugar and butter are blended into light caramel color,

Add in bananas and pecans or walnuts.

Add 1 1/2 cup maple syrup, stir.

Allow syrup to heat - Remove from burner.

Dip each piece of toast in syrup mixture and re-plate.

Place each serving back on plates, top with additional syrup left in pan.
