Mushroom Sushi Rolls

Ingredients: Nori - 1 sheet size 20x14sm,
rice - 150g,
rice vinegar - 500ml,
sauce Mirin - 40ml,
sugar - 2 tablespoons lemon - 1/4,
Kombu seaweed - 10g,
marinated mushrooms - 30g,
cucumber - 1 piece.,
avocado - 1pc.
Wash the rice. Pour into a saucepan and cover with cold water, then bring to perfection. Mix and put on low heat the rice vinegar, the Mirin sauce,the sugar,the lemon juice and Kombu seaweed. Simmer for 15-20 minutes, without boiling. Fill the hot rice with this sauce and cool it down.
On a sheet of nori put rice, leaving a small overlap. Cucumber, avocado and marinated mushrooms cut into thin strips and put on the rice. Wrap the roll in the roll round and cut into 6 equal parts.
