Noodle fun cutlets

Leftover hakka noodles- 250 grams
Ginger,finely chopped- 2 inch piece
Green chillies,finely chopped - 3
Potatoes,boiled, peeled and mashed- 2 medium
Cornflour/ corn starch- 3 tablespoons
Salt to taste
Fresh coriander leaves,finely chopped- 2-3 tablespoons
Oil- 3 tablespoons
Mix together ginger, green chillies, hakka noodles, potatoes, cornstarch, salt and coriander leaves in a bowl and mash well.

Heat oil in a non-stick pan. Divide the mixture into equal portions and shape them into balls and further press them lightly to make cutlets.

Place these cutlets, a few at a time on the hot pan and shallow fry, turning sides, till they turn golden brown on both sides. Drain on absorbent paper.Transfer onto a serving plate and serve hot.
